We’ll kick off the afternoon by exploring the magic of local wild mushrooms. Watch as James and Adam prepare this beautiful dish with garlic butter on toasted brioche, while sharing tips on sustainable foraging and seasonal sourcing. You’ll then enjoy the finished plate as a light lunch.
🐖 Curing Pannage Pork Pancetta
Next, dive into the age-old art of curing. You’ll learn how to prepare pannage pork belly, create a traditional salt cure, and begin the pancetta curing process. Best of all? You’ll take home your own piece of pancetta to finish curing and impress your friends with later.
